This savory cottage cheese toast is the perfect high-protein appetizer or snack!

We’re starting with whipped cottage cheese – a total game changer. Then, we’re topping it with balsamic roasted cherry tomatoes that are literally bursting with flavor.
Although cottage cheese has been known as a healthy breakfast option and popular diet food for generations, it’s recently been in the spotlight for its versatility.
Cottage cheese can be a great way to add protein to your diet in a super satisfying way.
With all the different ways to enjoy cottage cheese, these whipped toasts are definitely my favorite. They’re like bruschetta, only better.
Move over avocado toast, cottage cheese toast is the new sheriff in town!

Ingredients
A short list of simple ingredients is all you’ll need to make these savory toasts:
- Cottage cheese. I use the low fat kind (2%), but any kind you like will work in this recipe.
- Cherry tomatoes
- Baguette or other crusty bread (sourdough bread is always a good choice)
- Extra virgin olive oil
- Balsamic vinegar
- Garlic
- Red pepper flakes
- Sugar
- Salt
- Pepper

How to Make Cottage Cheese toast
Roast the Tomatoes
Start by placing your fresh tomatoes in an oven safe dish.
Add the olive oil, vinegar, garlic, sugar and crushed red pepper. Stir it around until the tomatoes are coated and roast them in the oven.
Whip the Cottage Cheese
While the tomatoes are roasting, make the cottage cheese topping.
Simply blend the cottage cheese, salt and pepper together in a food processor until smooth. This only takes about 20 seconds!
Toast the Bread
After the tomatoes have roasted for about 20-25 minutes, you’ll want to add the bread to the oven.
Slice the baguette and drizzle the slices with olive oil. Then, pop them into the oven. In ten minutes, you’ll remove the toasts and the tomatoes at the same time.
Chop the Tomatoes
Transfer the roasted tomatoes to a cutting board and run your knife through them a few times.
They’ll be easier to eat when they’re in smaller pieces.
Assemble the Cottage Cheese Toasts
Now, top each toast with some whipped cottage cheese. Then, place a little bit of tomato mixture on top of the cottage cheese. If you like, sprinkle fresh herbs on top. My favorites are basil and oregano.

Why is Cottage Cheese so Healthy?
Although it’s been around forever, cottage cheese is having its moment! And for good reason. It’s one of the healthiest cheeses out there! Here’s why:
1. High in protein. We’re talking a whopping 25 grams of protein per cup!
2. Low in fat. If you go for the 2% cottage cheese that I recommend, it will be lower in fat than other cheeses like cream cheese and ricotta cheese.
3. Lower in sugar. Cottage cheese contains lower amounts of lactose (sugar from milk) than other dairy products, and may be less likely to spike insulin levels.

Here are some of my favorite ways to enjoy this simple recipe:

Here are some of my favorite toppings:
1. Sweet cottage cheese toast: try using fresh fruit, fruit preserves, peanut butter, a drizzle of honey or even maple syrup for a sweet option that’s also high in protein.
2. Savory cottage cheese toast: top your toast with hard-boiled eggs, sliced avocado and a sprinkle of everything bagel seasoning for an easy breakfast that packs on the protein.
3. Appetizers for dinner: for something more substantial, try adding marinated and grilled chicken or steak to the top of your cottage cheese toast. Sprinkle fresh herbs, pickled red onion or a drizzle of hot honey on top.

Storage/Make Ahead Options
The best way to make these savory toasts in advance is to prepare the components separately.
Whip the cottage cheese and store it in an airtight container in the refrigerator. The same goes for the tomatoes.
When you’re ready to serve the toasts, simply warm the bread in the oven and reheat the tomatoes in the microwave. Then, you can easily assemble the toasts.
If you have leftover cottage cheese and tomatoes, store them separately in airtight containers in the refrigerator. The next time you want to enjoy them, simply prepare more toasts and top them!

Whipped Cottage Cheese Toast with Roasted Tomatoes
Ingredients
- 1 pint cherry tomatoes
- 16 oz. cottage cheese
- 1 baguette unsliced
- 3 cloves garlic minced
- 2 Tbsp. extra virgin olive oil
- 2 Tbsp. balsamic vinegar
- 1 tsp. sugar
- 1 tsp. salt
- 1/2 tsp. crushed red pepper
- 1/4 tsp. black pepper
Instructions
- Preheat oven to 375 degrees.
- In an oven safe dish, combine the tomatoes, extra virgin olive oil, vinegar, garlic, sugar, crushed red pepper. Roast for 20 minutes.
- Slice baguette and place the pieces on an ungreased baking sheet. Drizzle with olive oil. Place the bread into the oven with the tomatoes and let everything cook for an additional 10 minutes.
- While the bread and tomatoes are in the oven, place the cottage cheese, salt and pepper into a food processor. Blend until smooth.
- Remove the toasts and tomatoes from the oven. Transfer the tomatoes to a cutting board and chop into smaller pieces.
- Spread cottage cheese mixture onto the toasts and top with tomato mixture. Serve warm.
