Have you tried the viral Japanese cheesecake that’s all over social media?

I’m not talking about traditional Japanese cotton cheesecake that’s made with whipped egg whites. I’m talking about the trendy, 2-ingredient yogurt “cheesecake” that’s become a social media darling.
One bite and you’ll be hooked on this simple dessert that takes only 5 minutes to make!
My version of this yogurt cheesecake includes fresh strawberries and, let me tell you, it’s insanely good. We’re eating it on repeat these days.
Ingredients
- Greek yogurt or Skyr. For a texture closest to regular cheesecake, go for whole milk yogurt. I tested this recipe using both plain and vanilla skyr. Both were amazing! It really just depends on how tart you like it.
- Biscoff cookies
- Strawberries

How to Make Viral Japanese Cheesecake
Start by skimming a little yogurt off the top of the carton. The yogurt level will rise as you start to press the cookies in, so you want to leave a little room.
Then, press the cookies down into the yogurt vertically, as far as they will go. Slice the strawberries and fit them in between the cookies. Now, cover the container and refrigerate.
The idea is for the cookies to become soft in the yogurt the way that Nilla wafers become soft in banana pudding. Aim for at least 6 hours of refrigeration. For best results, let it sit in the fridge overnight.

What does Japanese yogurt cheesecake taste like?
Japanese yogurt cheesecake is creamy and tangy with a luscious mouthfeel that comes from whole milk yogurt. The indulgent experience is accentuated by the softened Biscoff cookies, with their caramelized, warmly spiced flavor.
I love adding a little brightness by incorporating freshly sliced strawberries into this recipe.

Variations
1. The yogurt. Choose between Greek yogurt and Skyr. Both are rich, creamy and high in protein. Skyr will be a little bit thicker in consistency, while Greek yogurt will be more tangy in flavor. It comes down to personal preference. I also tested this recipe using plain yogurt and vanilla yogurt. Both were delicious, but I leaned towards vanilla as the favorite.
2. The cookies. If you’re not able to find classic Biscoff cookies, try using ginger snaps or graham crackers.
3. The fruit. Experiment with fresh or canned fruits like blueberries and cherries.
4. The toppings. You might enjoy a drizzle of honey or maple syrup over your Japanese yogurt cheesecake. Play around with toppings and have fun!

Storage Instructions
If you have made your viral yogurt cheesecake in its original container, simply replace the lid and store it in the refrigerator.
If you have transferred it to another container or serving bowl, cover it over with plastic wrap. Your cheesecake will stay fresh in the fridge for 3-4 days.
