Ingredients
- Frozen dumplings. Any kind you like will work in this recipe. I use chicken dumplings, but you could choose pork or veggie dumplings too.
- Coconut milk. Go for a full fat can of coconut milk. It’s richer and creamier than the kind you find in a carton.
- Thai red curry paste. Most grocery stores carry it in their Asian sections. Or, when in doubt, grab it on Amazon.
- Baby bok choy. The veggies are optional, but it’s nice to add leafy greens when you can. Not a fan of bok choy? Try Napa cabbage or baby spinach.
- Garlic
- Ginger
- Soy Sauce
- Honey
- Rice Vinegar
- Lime Juice
- Chopped green onions

How to Make a One Pan Dumpling Bake
Make the Sauce
You won’t even need a mixing bowl for this! Simply whisk the sauce ingredients right in the baking dish.
Stir the coconut milk, curry paste, garlic, ginger, soy sauce, honey, rice vinegar and lime juice together until it’s silky and smooth.

Layer the Leafy Greens
Now, make a bed of greens for your dumplings. Set the bok choy leaves right on top of the sauce.

Arrange the Dumplings in the Baking Dish
Take the dumplings straight from the freezer and arrange them in rows in the baking dish. It looks nice if you overlap them slightly.

Bake the Dumplings
Cover the baking dish with foil for the beginning of the baking process. Then, remove it for the last 15 minutes.
It will be ready to enjoy in about 30 minutes!

Variations
1. The sauce. This sauce, as written in the recipe card, has a mild heat level. If you like more or less heat, go ahead and adjust the amount of curry paste. You could also try incorporating a few tablespoons of peanut butter and/or fish sauce for different depths of flavor.
2. The leafy greens. For alternatives to bok choy, try Napa cabbage, fresh spinach or kale.
3. The dumplings. Choose from chicken, pork, vegetable or shrimp dumplings. All will work in this recipe.
4. The garnishes. So many options! Try chopped fresh cilantro, chili crisp, toasted sesame seeds or furikake.

Serving Suggestions
This dumpling recipe is super versatile and can be used as an appetizer or main dish.
If you’re enjoying your dumplings for dinner, try serving them over Jasmine rice or even sushi rice. The sauce tastes amazing when mixed with the rice!
You could also include these dumplings as part of an appetizer spread with other Asian favorites like egg rolls, cream cheese rangoon and teriyaki chicken wings.

Storage Instructions
To store leftover dumplings, simply cover the baking dish with plastic wrap and refrigerate. Alternatively, transfer the dumplings and sauce to an airtight container.
They will stay fresh in the refrigerator for up to 5 days.
For longer storage, pop them into the freezer.
To reheat, place the dumplings back into the oven until warmed through.

Equipment
- 1 9×13 baking dish
Ingredients
- 36 frozen chicken dumplings
- 1 14 oz. can coconut milk
- 3 cups baby bok choy leaves
- 3 Tbsp. soy sauce
- 2 Tbsp. red curry paste
- 2 Tbsp. honey
- 1 Tbsp. rice vinegar
- 2 cloves garlic minced
- 2 tsp. ginger minced
- 1 tsp. lime juice
- 1/4 cup chopped scallions
Instructions
- Preheat oven to 375F degrees.
- In a 9×13 baking dish, whisk together the coconut milk, red curry paste, garlic, ginger, soy sauce, honey, lime juice and vinegar and until silky and smooth.
- Layer the bok choy in the baking dish so that it covers the bottom.
- Arrange the dumplings in rows on top of the bok choy, allowing them to overlap slightly. Cover the baking dish with foil.
- Bake for 20 minutes. Remove the foil and bake for another 10-15 minutes.
- Spoon the sauce over the dumplings. Garnish with chopped scallions, sesame seeds and chili oil if desired.
