Ingredients
Here’s what you’ll need to make these high-protein bagels:
- All purpose flour. Swap in gluten free flour or whole wheat flour to suit your preferences. More on that below!
- Cottage cheese. I used 4% milkfat cottage cheese in this recipe, but you could also use low fat cottage cheese.
- Egg
- Baking powder
- Kosher salt

How to Make Cottage Cheese Bagels
Whip the Cottage Cheese
Start by whipping the cottage cheese in a food processor or blender.
Whipping the cottage cheese is the game changer in getting the best texture out of these high protein bagels.

Make the Bagel Dough
Combine the whipped cottage cheese with the flour, baking powder and salt.
Knead it for a few minutes until you have a smooth ball of dough.

Form the Bagel Shapes
Divide the dough ball into 6 equal pieces. Then, poke a hole and stretch the dough to create a bagel shape.
Be sure to make the bagel hole bigger than you think it needs to be, because the hole will shrink as the bagels cook.

Prepare the Bagels for Baking
Just before baking, brush the bagels with beaten egg and sprinkle on your toppings of choice.

Bake!
Your homemade bagels should be perfectly golden brown in about 30 minutes. Be sure to let them cool completely before enjoying them.

Storage Instructions
Store your cottage cheese bagels same way you would store regular bagels: in an airtight container or Ziploc bag with the air squeezed out.
Freezing these bagels is the best way to store them.

The higher the fat content in the cottage cheese, the more flavorful your bagels will be. Therefore, I recommend using full-fat cottage cheese or reduced fat cottage cheese. Try to avoid using nonfat cottage cheese.

Cottage Cheese Bagels
Ingredients
- 1 1/2 cups all purpose flour
- 1 1/2 cups cottage cheese
- 1 large egg
- 1 1/2 tsp. baking powder
- 3/4 tsp. kosher salt
Instructions
- Preheat oven to 375F degrees. Line a baking sheet with parchment paper. Coat the parchment paper with nonstick cooking spray.
- In a mixing bowl, whisk together the flour, baking powder and salt.
- Place the cottage cheese into the bowl of a food processor. Whip the cottage cheese until smooth. Transfer to cottage cheese to the bowl of dry ingredients. Stir well to combine.
- Dump the dough out onto a lightly floured surface. Knead until smooth.
- Divide the dough into 6 balls. Poke a large hole (larger than you think you need) into each ball and stretch to make a bagel shape. Place the bagels onto the parchment lined baking sheet.
- Beat the egg. Brush each bagel with egg wash and sprinkle with seasonings of choice.
- Bake 30-35 minutes, until golden brown. Cool completely on the baking sheet.
