Preheat oven to 375F degrees. Line a baking sheet with parchment paper. Coat the parchment paper with nonstick cooking spray.
In a mixing bowl, whisk together the flour, baking powder and salt.
Place the cottage cheese into the bowl of a food processor. Whip the cottage cheese until smooth. Transfer to cottage cheese to the bowl of dry ingredients. Stir well to combine.
Dump the dough out onto a lightly floured surface. Knead until smooth.
Divide the dough into 6 balls. Poke a large hole (larger than you think you need) into each ball and stretch to make a bagel shape. Place the bagels onto the parchment lined baking sheet.
Beat the egg. Brush each bagel with egg wash and sprinkle with seasonings of choice.
Bake 30-35 minutes, until golden brown. Cool completely on the baking sheet.
