Take ordinary egg salad from drab to fab with this easy curried egg salad recipe!

We’re using six simple ingredients to make a super flavorful, high protein salad that’s perfect for sandwiches, deviled eggs or just on its own.
This easy recipe is gluten free, high protein and low carb. Yet, it’s super satisfying and filling.
Curried egg salad can be elegant enough for tea sandwiches or simple enough to eat right out of the container. That’s why I always love having it on hand.
Ingredients
- Eggs
- Mayonnaise
- Green onions
- Curry powder
- Salt
- Black pepper

How to Make Curried Egg Salad
Hard Boil the Eggs
I’ll give you foolproof instructions in the recipe card below.
But, if you find yourself making hard boiled eggs regularly, I recommend buying an electric egg cooker. It’s an inexpensive tool that you can set and forget, and it guarantees perfect hard boiled eggs with zero effort from you.
Make the Dressing
Combine the mayo, curry powder, salt and pepper in a medium bowl. Dice up the scallions and stir them into the dressing.
Combine the Eggs and Dressing
Peel the hard boiled eggs and give them a rough chop. Then, fold them into the dressing until everything is well combined. Done and done!

How to Make Perfect Hard-Boiled Eggs
If you don’t have an electric egg cooker or Instant Pot, hard boiling eggs the old fashioned way is pretty easy.
Simply place your uncooked eggs in a single layer in a saucepan. Then, cover the eggs with cold water so that there’s about 1 inch of water.
Now, watch for the water to boil. Once it does, turn the heat off and cover the saucepan.
After about 10 minutes, plunge the eggs into a bowl of ice water and let them cool to room temperature.
They’ll be perfectly hard boiled and ready to peel and eat.

Serving Suggestions
1. Curried Egg Salad Sandwich: Make pretty little tea sandwiches with white or whole wheat bread. Cut the crusts off and cut the sandwich into quarters. Add a little crunch with cucumber slices or arugula leaves.
2. Curried Deviled Eggs: Fill hard-boiled egg whites with curried egg salad. Sprinkle with paprika for a pretty presentation.
3. High Protein Salad: Place a large scoop of curried egg salad over a bed of crisp lettuce for a low carb meal.

Make Ahead and Storage Instructions
This easy recipe can be prepared ahead of time and stored in an airtight container in the refrigerator for up to 5 days.

Curried Egg Salad
Ingredients
- 8 large eggs
- 3/4 cup mayonnaise
- 1/4 cup green onions chopped
- 1 tsp. curry powder
- 1/2 tsp. salt
- 1/4 tsp. pepper
Instructions
- Hard boil the eggs: Place eggs in a large saucepan. Cover the eggs with about an inch of cold water. Bring to a boil. Once the water boils, turn off the heat and cover. Let rest for 10 minutes. Remove into a bowl of ice water. Once cool, peel the eggs.
- Roughly chop the hard boiled eggs. Set aside.
- In a medium sized bowl, whisk together the mayonnaise, curry powder, salt and pepper. Fold in the eggs until well combined.
