Hard boil the eggs: Place eggs in a large saucepan. Cover the eggs with about an inch of cold water. Bring to a boil. Once the water boils, turn off the heat and cover. Let rest for 10 minutes. Remove into a bowl of ice water. Once cool, peel the eggs.
Roughly chop the hard boiled eggs. Set aside.
In a medium sized bowl, whisk together the mayonnaise, curry powder, salt and pepper. Fold in the eggs until well combined.
