Curried Egg Salad

Ingredients
  

  • 8 large eggs
  • 3/4 cup mayonnaise
  • 1/4 cup green onions chopped
  • 1 tsp. curry powder
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Instructions
 

  • Hard boil the eggs: Place eggs in a large saucepan. Cover the eggs with about an inch of cold water. Bring to a boil. Once the water boils, turn off the heat and cover. Let rest for 10 minutes. Remove into a bowl of ice water. Once cool, peel the eggs.
  • Roughly chop the hard boiled eggs. Set aside.
  • In a medium sized bowl, whisk together the mayonnaise, curry powder, salt and pepper. Fold in the eggs until well combined.
