That’s why I love having these baked egg white bites on hand. It takes only 30 seconds to microwave them in the morning, and you’re good to go! They’re really the best things to happen to busy people.

Ingredients for this Baked Egg White Recipe
You’ll only need 7 simple ingredients to make these delicious breakfast bites:
- Liquid egg whites. This is a more cost effective way to go when making egg white recipes, especially if you don’t plan on using the yolks later.
- Fresh spinach
- Turkey bacon
- Cottage cheese
- Roasted red peppers
- Parmesan cheese
- Garlic powder

How to Make Baked Egg White Bites
Process the Egg Whites
First, load the egg whites, cottage cheese, garlic powder, salt and pepper into a food processor or blender.
Process the mixture until it’s smooth and frothy.
Prep the Veggies and Bacon
Cook the bacon using your preferred method, either in a pan or in the oven. Dice it up nice and small, and place it into a large mixing bowl.
Then, chop the spinach and roasted red peppers and put them into the bowl too.
Now, pour the egg mixture into the bowl and stir it all together.
Fill a Muffin Pan
Be sure to coat your muffin pan with nonstick cooking spray for easy release. Then, pour the egg white mixture into the muffin cups.
Now, the only thing left to do is sprinkle the top of each unbaked egg white bite with a little bit of Parmesan cheese. Now they’re ready to bake.
Release the Egg White Bites from the Muffin Pan
Watch out, these egg white bites will puff like a soufflé in the oven. It’s actually kind of cool to watch. And, like a soufflé, they’ll delfate back down to size once they cool for a few minutes.
Let them cool in the muffin tin before you release them.

Recipe Variations
1. If you love the sous vide egg white bites at Starbucks, simply substitute Monterey Jack cheese for the Parmesan in this recipe and leave out the turkey bacon for a copycat version.
2. Experiment with the meats you use. For example, try crumbled turkey sausage or, if you don’t mind the added fat, real bacon.
3. Change up the veggies you use to suit your preferences. My favorites are sun dried tomatoes and diced yellow bell peppers.
4. For extra flavor and richness, try using a 50/50 split of egg whites and whole eggs.

How to Store Baked Egg White Bites
- In the Refrigerator: Wrap your egg white bites in plastic wrap or place them into an airtight container. Refrigerate them for up to one week.
- In the Freezer: Seal your egg white bites in an airtight container or freezer bag. Try to squeeze out as much air as possible. Freeze for up to 3 months.
How to Reheat Baked Egg White Bites
For a quick breakfast on a busy weekday, microwave these egg white bites directly from the refrigerator for about 30 seconds.
If your egg white bites are frozen, try let them defrost for a while before microwaving. The texture is not the best if you try to reheat them from a frozen state. It becomes a bit spongey, and nobody likes that.

How many whole eggs should be used if you’re not using liquid egg whites?
You’ll need 24 regular eggs to make this recipe if you choose not to use liquid egg whites. Using whole eggs is great if you have a recipe you want to try that calls for egg yolks, like crème brûlée or key lime pie.
But if you don’t plan on using the yolks, save yourself some time and money and go for a carton of liquid egg whites.
Do you have to use a muffin pan?
If you prefer more of a soufflé over egg muffins, here’s some good news for you: you don’t need to make muffins!
Simply pour this mixture into a glass baking dish that’s been coated with nonstick cooking spray. You may need to increase the cook time by 5-10 minutes.
It will bake up puffy and beautiful, and you can slice it into individual servings.

Baked Egg White Bites Recipe with Spinach and Bacon
Equipment
- 1 12-cup muffin tin
Ingredients
- 3 cups liquid egg whites
- 2 cups fresh spinach, chopped
- 1 cup cooked turkey bacon, diced about 10 strips
- 3/4 cup cottage cheese
- 1/3 cup roasted red peppers, diced
- 1/4 cup Parmesan cheese
- 1/2 tsp. salt
- 1/2 tsp. garlic powder
- 1/4 tsp. black pepper
Instructions
- Preheat oven to 350 degrees. Coat a 12-cup muffin tin with nonstick cooking spray.
- In a food processor or blender, combine egg whites, cottage cheese, salt, pepper and garlic powder until well blended.
- In a large bowl, combine the chopped spinach, diced red peppers and diced bacon. Pour in the egg mixture and stir together.
- Pour the egg mixture into the prepared muffin tin. Sprinkle the tops evenly with Parmesan cheese. Bake 25 minutes. Allow to cool 15-20 minutes before removing from muffin pan.
