Preheat oven to 350 degrees. Coat a 12-cup muffin tin with nonstick cooking spray.
In a food processor or blender, combine egg whites, cottage cheese, salt, pepper and garlic powder until well blended.
In a large bowl, combine the chopped spinach, diced red peppers and diced bacon. Pour in the egg mixture and stir together.
Pour the egg mixture into the prepared muffin tin. Sprinkle the tops evenly with Parmesan cheese. Bake 25 minutes. Allow to cool 15-20 minutes before removing from muffin pan.
