These Easy Roasted Crispy Chickpeas are the best thing that ever happened to healthy eaters. They’re gluten free, low carb, vegan, high in fiber and protein… But wait, here’s the best part: they are super satisfying! Salty, crunchy and highly addictive, they’re roasted right in your oven or air fryer. So you’ll never feel bad indulging.
Are Crispy Chickpeas good for you?
As a food blogger, when I hear the word “crispy” I automatically think “fried”. Not the case here, my friends. We’re taking chickpeas, also known as garbanzo beans, which are naturally fiber-rich and a great source of protein and healthy fat, sprinkling them with a little extra virgin olive oil (more healthy fat) and pan-roasting them.
You won’t believe how crispy they get without ever being fried! So you get the same satisfaction you’d get from salty, crunchy potato chips. They’re such a great diet saver!
The key to getting the crispiest roasted chickpeas
If you find yourself with chickpeas that aren’t crispy and crunchy, it’s probably because you didn’t dry them out thoroughly before roasting or air frying them.
The most important step in making these crispy chickpeas is the first step: spreading them out onto paper towels and letting them get completely dry. When you spread them out, place a second piece of paper towel on top of them and gently press down to absorb the moisture. Then, just let them air dry.
This process only takes about 15 minutes. Properly dried chickpeas will result in a crispy, crunchy snack.
How to store Roasted Chickpeas
There is advice out there that says you should store roasted chickpeas in a place where air can get to them. I have not found this to be necessary.
These Roasted Crispy Chickpeas will maintain their crunch when you store them in a sealed plastic or glass container, or even a ziploc bag. They’re great to have around when you’re craving a salty crunch. So why not make extra?
How to serve these Easy Crispy Chickpeas
If you can make it past eating these salty little guys by the handful, try tossing them into a salad as a lower carb alternative to croutons. They’re also a great accompaniment to a Greek mezze platter, a seasonal cheese board or as a garnish to hummus and other Mediterranean-style dips.
The possibilities are endless and the process is too easy. So what are you waiting for? Go make ’em! And let me know what you think. Drop a rating or leave a comment below. Enjoy!
