Guinness cheese dip is the ultimate fusion of beer and cheese. It’s creamy, garlicky, hoppy and all-around addictive!

Enjoy this warm pot o’ gold for St. Patrick’s Day, game day or any time you’re craving an easy, cheesy appetizer.
Ingredients
- Sharp cheddar cheese. Dubliner cheese or any other good, sharp cheddar will be perfect in this dip. As always, try to grate the cheese by hand vs. using pre-shredded cheese.
- Guinness beer
- Cream cheese
- Worcestershire sauce
- Garlic
- Butter
- Flour
- Dry mustard
- Paprika
- Onion Powder
- Salt

How to Make Guinness Cheese Dip
Make a Roux
Start by melting butter in a saucepan over medium-low heat. Be sure to keep the heat on the low side so that you don’t burn the butter.
Then, stir in the garlic and flour. The mixture will start to bubble in just 1-2 minutes. This is your roux, which will help to thicken the dip.

Add the Beer and Spices
Now, stir in the Guinness, Worcestershire and dry spices. Here’s when things start to smell amazing.
Stir in the Cheese
Whisk in your grated cheddar and softened cream cheese last, and let the mixture get thick and creamy.

Serving Suggestions
1. Pretzels. If you’re going to leave me on a desert island, please leave me with beer, cheese and pretzels. Hard pretzels and soft pretzels are a delicious pairing for this Guinness dip.
2. Chips. Sturdy pita chips, tortilla chips and kettle cooked potato chips are a few of my favorite dippers for this cheesy appetizer.
3. Irish soda bread. If you’re making Guinness dip for St. Patrick’s Day, why not go all the way and pair it with rustic soda bread? They’re the perfect match.

Storage Instructions
Store any leftover cheddar dip in an airtight container in the refrigerator. It will stay fresh for up to 5 days.
To reheat, warm it over low heat in a saucepan. Add a splash of milk or water for a looser consistency. In a pinch, you can also microwave the dip.

Guinness Beer Cheese Dip
Ingredients
- 4 cups sharp cheddar cheese grated
- 4 oz. cream cheese room temperature
- 12 oz. Guinness beer
- 2 Tbsp. unsalted butter
- 2 Tbsp. all purpose flour
- 1 garlic minced
- 1 tsp. Worcestershire sauce
- 1/2 tsp. dry mustard
- 1/2 tsp. salt
- 1/4 tsp. paprika
- 1/4 tsp. onion powder
Instructions
- Melt butter in a saucepan over medium-low heat. Whisk in the garlic and flour. Cook until bubbling, about 1 minute.
- Whisk in the beer, Worcestershire sauce, dry mustard, paprika, onion powder and salt.
- Stir in the grated cheddar cheese and softened cream cheese. Bring the mixture a boil over high heat, whisking.
- Reduce heat to low and simmer about 5 minutes, until thickened. Serve warm.
