Let me be the first to say, this is not your mama’s onion dip recipe. This Caramelized Onion Dip is leveled waaayy up from that boxed onion soup mix dip that we grew up on.
Not that I don’t love that boxed mix. It’s so good. But this is way better. And I mean, next level better.
It’s all thanks to the sweet, caramelized onions that cook down in a big skillet until their natural sugars release and they turn a deep, golden brown color.
The depth of flavor that comes from caramelizing sweet onions just can’t be duplicated, and it’s what makes this caramelized onion dip so very special.
This is a perfect dip for holidays or any time you’re entertaining and want to do something a little extra delicious. Always a crowd pleaser, it’s a great party dip to serve with kettle-cooked chips and raw veggies.
What’s in this Caramelized Onion Dip
Here’s what you’ll need to make this creamy caramelized onion dip recipe:
- Onions. White and yellow are good choices. You could also opt for Vidalia onions, which are already sweeter in flavor than any other type of onion. Avoid red onions, as they have too much of a bite for this recipe.
- Shallots
- Greek yogurt
- Sour cream
- Fresh thyme sprigs
- Dry white wine. This means Pinot Grigio, Sauvignon Blanc or a dry Chardonnay.
- Red wine vinegar. Balsamic vinegar or sherry vinegar would also be delicious.
- Extra virgin olive oil
- Onion powder
How to Make Homemade Caramelized Onion Dip
Caramelize the Onions
To “caramelize” something means to cook it over lower heat for a longer time than usual so that its natural sugars release.
Caramelization requires low or medium-low heat plus a fat for cooking, either butter or oil. It also requires a little patience, as you wait for your onions to slowly release sugars and turn a deeper color.
For our purposes, we’re cooking our sliced onions and shallots in a large skillet with a little bit of olive oil.
This step takes about 25 minutes, and the end result is a golden brown color and soft, translucent onions.
Add the Wine
But wait, there’s more! Now it’s time to stir in the wine and vinegar.
You’ll see the onions and shallots take on an even deeper color and start to smell ah-mazing in the next 15 minutes of cooking.
At this point, they’ll be completely caramelized and we’ll take them off the heat to cool.
Mince the Onions
Once your golden caramelized onions are cool enough to handle, transfer them to a cutting board.
Using a sharp knife, mince the onions and put them into a large mixing bowl.
You could use a food processor for this step, just be careful not to overprocess the onions.
Add the Remaining Dip Ingredients
The last step is to mix in the rest of the ingredients: sour cream, Greek yogurt, chives and onion powder.
Give a taste, and if you want to add some salt or black pepper, go for it.
How to Serve Caramelized Onion Dip
A special dip calls for special dippers! Opt for pita chips, kettle-cooked potato chips and flour or corn tortilla strips. Thin pretzel chips also pair incredibly well with this dip.
Be sure to offer raw vegetables for dipping as well. My favorites are cucumber rounds, broccoli and cauliflower florets and bell pepper strips.
How to Store Caramelized Onion Dip
The best way to store this caramelized onion dip is in an airtight container in the refrigerator.
Believe it or not, it tastes even better the day after you make it! Refrigeration will give the ingredients a chance to blend together, further deepening the caramelized onion flavor.
This dip will stay fresh in the refrigerator for up to one week.

Best Caramelized Onion Dip Recipe (With Greek Yogurt)
Ingredients
- 1 lb. yellow onions thinly sliced
- 2 large shallots thinly sliced
- 1 1/2 cups sour cream
- 1 cup dry white wine
- 1/2 cup Greek yogurt
- 1/4 cup extra virgin olive oil
- 1/4 cup fresh chives minced
- 2 Tbsp. red wine vinegar
- 2 tsp. onion powder
- 4 sprigs fresh thyme minced
Instructions
- Heat oil in a large nonstick pan over medium heat. Add the sliced onions and shallots and the minced thyme. Saute until the onions become golden brown in color and begin to caramelize, about 25 minutes.
- Add wine and vinegar and continue to cook the onions down, stirring occasionally, until completely caramelized, about 15 more minutes. Remove from heat and cool to room temperature.
- Transfer the onion mixture to a cutting board. Mince the onions with a sharp knife. Place the minced onions in a large mixing bowl. Stir in the sour cream, Greek yogurt, chives and onion powder. Mix well.
- Season with salt and pepper to taste.
