Ingredients
- Sardines. Look for the boneless and skinless kind, packed in olive oil.
- Sourdough bread. Try my homemade recipe for sourdough or grab a loaf at the grocery store. I recommend buying an unsliced loaf so that you can control the the thickness of the slices.
- Cherry tomatoes. Grape tomatoes can also be used.
- Cucumber
- Pickled onion. Try my easy homemade recipe for pickled onions, or grab a jar at the grocery store.
- Garlic
- Fresh parsley

How to Make Sardine Toast
Toast the Sourdough
Arrange your sourdough bread slices on an ungreased baking sheet.
Then, open the can of sardines and brush some of that glorious oil onto the bread slices. The oil is the good stuff!
Now, toast them until they’re golden brown.
Chop your Veggies
While the sourdough is toasting, go ahead and slice the cucumber, chop the tomatoes and chop the parsley.

Assemble the Toasts
Before you load on the toppings, run the whole surface area of the toast with the clove of garlic. This adds amazing flavor and aroma.
Now, layer the cucumbers, followed by the sardines (mash them down a little), tomatoes and pickled onions. Garnish the top of the toasts with fresh parsley.

Sardine Toast Recipe
Ingredients
- 4 slices sourdough bread
- 1 3.75 oz. can sardines boneless and skinless, packed in oil
- 1 cup cherry tomatoes
- 1/2 cucumber
- 1/4 cup pickled onions
- 1 clove garlic
- fresh parsley garnish
Instructions
- Preheat oven to 425F degrees.
- Place the sourdough slices on a baking sheet. Brush the sourdough with some of the oil from the sardine can. Toast for 5 minutes.
- While the bread is toasting, slice the cucumber and quarter the tomatoes. Give the parsley a rough chop.
- Remove the toast from the oven. Rub each slice with the garlic clove. Discard the garlic.
- Arrange the cucumber slices on the toasts. Then, divide the sardines between the slices and smash them down with a fork. Top with pickled onions, chopped tomatoes and parsley.
