What are Corn Ribs?
Corn ribs are pieces of corn cut lengthwise into long wedges that curl into a rib shape as they cook. The curling happens because the corn kernels shrink faster than the part of the cob, creating the signature appearance that resembles barbecue ribs.
The classic corn rib recipe became popular on social media because it’s a fun take on Mexican street corn. Instead of serving a whole ear of corn, you slice the cob into shorter ribs or long strips that are easier to season and dip.

Ingredients
- Corn on the cob
- Chili powder
- Garlic powder
- Smoked paprika
- Salt
- Extra virgin olive oil
Here’s what you’ll need for the dipping sauce:
- Mayonnaise
- Sour cream
- Lime juice
- Chili powder

How to Make Air Fryer Corn Ribs
Cut the Corn into Ribs
Grab a wooden cutting board and a very sharp knife for this part!
Start by cutting the ends off of widest end of the corn cob so that you have a flat surface. Then, hold the corn upright on the cutting board. Now, cut downwards, lengthwise, until you have two half cobs.
Then, lay each half cob flat on the cutting board and cut them in half, lengthwise. You’ll get 4 long strips from each ear of corn.

Season the Corn
In a small bowl, whisk together the olive oil, salt, garlic powder, chili powder and smoked paprika.
Now, use a pastry brush to coat the corn ribs with the mixture.

Air Fry the Corn
Place the corn ribs into the air fryer basket. You can arrange them pretty close together, as long as they are not touching.
Cook them in your preheated air fryer for 6 minutes, flip them over, and cook another 6 minutes.

Make the Dipping Sauce
Creamy dipping sauce is a simple mixture of mayo, sour cream, lime juice and a little bit of chili powder. Mix it all together and serve it along with warm corn ribs.

Serving Suggestions
These seasoned corn ribs make a great side dish. Serve them with:
- Burgers
- BBQ ribs
- Grilled steak
- Chicken tacos
- Pulled pork sandwiches
- Fish tacos
- Grilled shrimp

Storage Instructions
Store leftover air-fried corn ribs in an airtight container in the refrigerator for up to 3 days.
To reheat, place them back into the air fryer basket for 3 to 4 minutes until warmed through and crispy again.
Tips for the Best Air Fryer Corn Ribs
- Use fresh sweet corn with plump kernels for the sweetest flavor.
- Always arrange the corn in a single layer in the air fryer for even cooking.
- Brush on the seasoning instead of pouring it over for better coverage.

Frequently Asked Questions
It is not recommended. While the corn cobs soften slightly during cooking, the part of the cob remains too tough to eat comfortably. Instead, hold the cob like you would a rib and bite the tender corn kernels away.
Fresh corn gives the best texture in this recipe. Frozen corn on the cob tends to be softer and may not curl into the signature rib shape as well.
Absolutely. Add extra chili powder, cayenne pepper, or your favorite hot sauce after cooking.
This recipe is already dairy free! To make the dipping sauce dairy free, skip the sour cream and use only mayo.
