Air Fryer Corn Ribs

A fun twist on classic corn on the cob with bold seasonings and a creamy dipping sauce

Ingredients
  

  • 4 ears corn
  • 1/4 cup extra virgin olive oil
  • 1 tsp. chili powder
  • 1 tsp. garlic powder
  • 1 tsp. smoked paprika
  • 1/2 tsp. salt

Dipping Sauce

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 4 tsp. lime juice
  • 1 dash chili powder

Instructions
 

  • Preheat the air fryer to 400F degrees.
  • Cut the widest end of an earn of corn off so that you have a flat surface. Then, place the cut end on a cutting board vertically. Using a sharp knife, cut the corn in half downwards into two long pieces. Then, cut each longer piece in half so you have 4 long strips. Repeat this process with the remaining ears of corn.
  • In a small bowl, whisk the olive oil, salt, garlic powder, chili powder and smoked paprika. Brush the corn with this mixture.
  • Arrange the corn strips in the basket of the air fryer. They can be close together as long as they are not touching.
  • Air fry for 6 minutes. Flip, and cook for an additional 6 minutes.
  • Make the dipping sauce: In a small bowl, combine the mayonnaise, sour cream, lime juice and chili powder. Serve with warm corn ribs.
