Turkish Pasta

Ingredients
  

  • 12 oz. bowtie pasta
  • 1 lb. ground turkey
  • 1 large onion diced
  • 1 Tbsp. tomato paste
  • 1 Tbsp. extra virgin olive oil
  • 2 tsp. paprika
  • 1 tsp. onion powder
  • 1 tsp. salt
  • 1/2 tsp. cumin

Butter Sauce

  • 1/2 cup unsalted butter
  • 4 tsp. fresh mint
  • 4 tsp. paprika
  • 1 tsp. red pepper flakes
  • 1 tsp. salt

Yogurt Sauce

  • 1 cup Greek yogurt
  • 2 cloves garlic minced
  • 1/2 tsp. lemon juice
  • 1/2 tsp. salt

Garnishes

  • cherry tomatoes halved
  • fresh parsley chopped

Instructions
 

  • Boil and drain the pasta according to package directions for al dente.
  • Heat oil in a large skillet over medium heat. Add the diced onions and saute until softened. Add the ground turkey and brown, breaking up with a wooden spoon while cooking.
  • Stir in the onion powder, tomato paste, paprika, cumin and salt. Remove from heat and set aside.

Make the Butter Sauce

  • Melt butter over low heat in a small saucepan. Stir in the chopped mint, paprika, red pepper flakes and salt. Remove from heat and set aside.

Make the Yogurt Sauce

  • Combine the yogurt, garlic, lemon juice and salt in a small bowl.

Assemble the Dish

  • In serving bowls, layer the pasta, yogurt, ground turkey and butter sauce. Top with chopped cherry tomatoes and fresh parsley.
