Easy Blueberry Crisp Recipe with Oatmeal Topping

Ingredients
  

The Filling

  • 6 cups fresh blueberries
  • 2/3 cup white sugar
  • 1/4 cup lemon juice
  • 6 Tbsp. cornstarch
  • 1 tsp. vanilla extract

The Crust

  • 1 cup oats
  • 1/2 cup all purpose or gluten free flour
  • 1/4 cup turbinado (raw) sugar
  • 6 Tbsp. unsalted butter
  • 2 Tbsp. brown sugar
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt

Instructions
 

  • Preheat oven to 350 degrees.
  • Combine the blueberries, lemon juice, cornstarch, vanilla and white sugar in a large bowl. Mix well.
  • Coat a 9x9 baking dish with nonstick cooking spray. Pour the blueberry mixture into the prepared baking dish.
  • In a medium bowl, combine the oats, flour, raw sugar, brown sugar, cinnamon and salt.
  • Melt the butter and pour it into the other crust ingredients. Stir until well combined. Sprinkle the crust mixture over the blueberries.
  • Bake 55-60 minutes, until golden brown and bubbling. Serve at room temperature or slightly warm.
