Easy Blueberry Crisp Recipe with Oatmeal Topping

The Filling
- 6 cups fresh blueberries
- 2/3 cup white sugar
- 1/4 cup lemon juice
- 6 Tbsp. cornstarch
- 1 tsp. vanilla extract
The Crust
- 1 cup oats
- 1/2 cup all purpose or gluten free flour
- 1/4 cup turbinado (raw) sugar
- 6 Tbsp. unsalted butter
- 2 Tbsp. brown sugar
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
Preheat oven to 350 degrees.
Combine the blueberries, lemon juice, cornstarch, vanilla and white sugar in a large bowl. Mix well.
Coat a 9x9 baking dish with nonstick cooking spray. Pour the blueberry mixture into the prepared baking dish.
In a medium bowl, combine the oats, flour, raw sugar, brown sugar, cinnamon and salt.
Melt the butter and pour it into the other crust ingredients. Stir until well combined. Sprinkle the crust mixture over the blueberries.
Bake 55-60 minutes, until golden brown and bubbling. Serve at room temperature or slightly warm.
