- Oats. Be sure you’re using traditional, slow cooking oats and not the instant kind.
- Flour. All purpose flour can be substituted for gluten free flour for a gluten free dessert.
- Lemon juice
- Cornstarch. This serves as the thickener for the blueberry filling, resulting in a thicker texture similar to blueberry pie filling.
- Butter

How to Make this Blueberry Crisp Recipe
Make the Blueberry Filling
Mix your fresh berries with cornstarch, lemon juice, sugar and vanilla. At first, the mixture will look white but that color will go away as the cornstarch dissolves.
Set the filling mixture aside while you make the crisp topping.

Make the Crisp Topping
Place the flour, oats, sugars, cinnamon and salt in a mixing bowl. Whisk everything together really well.

Ingredients
The Filling
- 6 cups fresh blueberries
- 2/3 cup white sugar
- 1/4 cup lemon juice
- 6 Tbsp. cornstarch
- 1 tsp. vanilla extract
The Crust
- 1 cup oats
- 1/2 cup all purpose or gluten free flour
- 1/4 cup turbinado (raw) sugar
- 6 Tbsp. unsalted butter
- 2 Tbsp. brown sugar
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
Instructions
- Preheat oven to 350 degrees.
- Combine the blueberries, lemon juice, cornstarch, vanilla and white sugar in a large bowl. Mix well.
- Coat a 9×9 baking dish with nonstick cooking spray. Pour the blueberry mixture into the prepared baking dish.
- In a medium bowl, combine the oats, flour, raw sugar, brown sugar, cinnamon and salt.
- Melt the butter and pour it into the other crust ingredients. Stir until well combined. Sprinkle the crust mixture over the blueberries.
- Bake 55-60 minutes, until golden brown and bubbling. Serve at room temperature or slightly warm.
