Pulse the flour, breadcrumbs and dry spices in a food processor until fine. Transfer the mixture to a shallow bowl.
In a separate bowl, beat the eggs together with the hot sauce.
Slice the chicken into long, thin strips. Heat 1/4 inch of oil in a large skillet over medium-low heat.
Dredge the chicken strips in the egg and then the breadcrumb mixture. Fry the chicken fries in the hot oil until tender and golden brown, about 5 minutes, flipping halfway through cooking.
Remove chicken fries onto a wire rack set over paper towels.
Make the special sauce: Stir together the mayonnaise, ketchup and relish in a small bowl.
Serve chicken fries warm with special sauce for dipping.
