In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugar on medium speed until fluffy, scraping the sides of the bowl as necessary. Beat in the egg and vanilla to combine. (Alternatively, use a large mixing bowl and a handheld electric mixer for this part.)
In a medium bowl, whisk together the dry ingredients: flour, chopped cinnamon chips, cinnamon and salt. Fold the flour mixture into the wet ingredients. Wrap in plastic wrap and chill for at least 1 hour.
Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Roll out the dough onto a well-floured surface and cut into shapes. Place onto the prepared baking sheet. Sprinkle with turbinado sugar.
Bake in the preheated oven 14 minutes, until the edges are slightly golden. Allow to cool on the baking sheet for 5-10 minutes before transferring to a cooling rack.
