Sweet Southern Biscuits

As a Northerner, I have always been fascinated with the South. The music, the accents, the climate, the food, the laid back way of life. Maybe it only happens in the movies, but I imagine living in the South to be a slower paced, worry-free life of sipping sweet tea on a porch swing while waving to neighbors who mosey by. By the way – if it’s not like that in real life, I don’t want to know.

Whenever we visit the South, my cravings start long before we even arrive. And without fail, the first thing we do upon arrival is grab a good Southern breakfast. And that means biscuits. I’m not talking about the flaky buttermilk kind that goes with fried chicken or gets drowned in gravy. I’m talking about Sweet Southern Biscuits that you slather with homemade fruit jam or honey butter. The kind of biscuits that melt in your mouth and make a big smile creep across your face.

What’s in these Sweet Southern Biscuits

These Sweet Southern Biscuits remind me of the tea biscuits that my mom would eat when I was growing up. I remember they had raisins in them, and my mom would cut them in half and spread strawberry jelly on them. I was the only other member of our family who liked them. But they were definitely dry. These biscuits are better.

We are swapping in cream and Greek yogurt for buttermilk which will yield a more moist and less flaky biscuit, so you get something more like a shortcake. Of course we’re also working in some cold, unsalted butter – a biscuit staple. And with only 3 tablespoons of sugar in the entire recipe, these biscuits are only mildly sweet.

How to make these biscuits

And they are so easy to make. You really just can’t mess these biscuits up. The batter comes together in a snap and 15 minutes later they’re done. Just mix the flour, baking powder, sugar and salt together. Then work in that cold butter. Stir in the cream and yogurt, and roll it out. If you don’t have a biscuit cutter, the rim of any glass with a 2″ – 3″ radius will get the job done.

Just writing this has got me craving some eggs over easy with a side of grits to go along with my delicious, hot out of the oven Sweet Southern Biscuits. And when I’m not spreading butter or homemade blackberry jam on these Sweet Southern Biscuits, I’m using them as a base for sliced berries and whipped cream for dessert.

Sweet Southern Biscuits

Ingredients
  

  • 1 3/4 cups flour
  • 3 Tbsp. sugar
  • 1/2 stick cold butter cubed
  • 1/2 cup heavy cream
  • 1/3 cup Greek yogurt
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • Sanding sugar for sprinkling

Instructions
 

  • Preheat oven to 425 degrees.
  • Whisk dry ingredients in a medium-sized bowl. Cut in the butter using a pastry blender or your hands. Stir in the cream and yogurt.
  • Roll out the dough on a floured surface until about 1″ thick. Use a 2-3 inch biscuit cutter to cut out the biscuits and lay them onto a parchment-lined baking sheet. Brush with more cream and sprinkle with coarse sugar.
  • Bake 13-15 minutes until slightly golden in color.
