How to Make Banana Bread French Toast
Make the Banana Bread (Skip this step if you’re using store bought banana bread)
Follow my recipe for super moist banana bread and let it cool completely. For best results, make the loaf a day in advance.
Once it’s cooled, turn it out of the loaf pan and cut it into 10-12 slices.

Prepare the French Toast Batter
Grab a large bowl and beat the eggs. Then, stir in the milk, sugar, cinnamon and salt.
Now, start soaking the first few slices of banana bread in the egg mixture.
You want to soak the slices on both sides and press them down gently into the egg mixture to make sure they’re fully saturated.

Cook the French Toast
Start by melting butter in a large skillet over medium-low heat. It’s important to keep the heat low!
Cook the bread, flipping, until both sides are golden brown and have a light crusting on the outside. Add a little bit of butter to the pan with each new piece of bread until you’ve cooked them all.

Serving Suggestions
Enjoy your French toast with a drizzle of maple syrup and/or a dusting of powdered sugar.
I also love to garnish this dish with sliced bananas. The brightness of the fresh fruit is a great way to balance the richness of the French toast.

Pro Tips
The perfect French toast has a slightly crispy exterior and a warm, soft interior. For the most delicious banana bread French toast, follow these tips:
1. Dry out the bread. This means either use day old or leftover banana bread. If you’re using freshly baked banana bread, try putting the slices in the oven at 250F degrees for about 30 minutes. Using slightly dried out bread will prevent against soggy French toast.
2. Cook the French toast low and slow. Keeping your heat to medium-low will ensure even cooking so that you don’t burn the outsides of the toast before the custard-soaked insides get a chance to cook.
3. Soak the bread well. Be sure that both sides of the bread are saturated with the egg mixture, and press the bread down into the mixture. This will ensure that your French toast isn’t dry in the middle.

Storage Instructions
Wrap leftover banana bread French toast in aluminum foil or place it in an airtight container. Your leftovers will stay fresh in the fridge for 3-4 days.
The next time you want to enjoy it, simply reheat in a toaster oven or warm the banana bread slices in a pan with a little pat of butter.

Should you use Store bought or homemade banana bread for this recipe?
While homemade is always best, I recommend you use whatever works best for you.
Even if you have a loaf of dry, store bought banana bread, it will still work in this recipe, because a little dryness actually helps!
