Taco in a Bowl

- 1 lb. ground turkey
- 4 cups cooked white rice
- 2 cups cherry tomatoes quartered
- 2 cups iceberg lettuce shredded
- 1 avocado diced
- 1 cup taco sauce
- 1 cup cheddar cheese shredded
- 1 cup diced onion 1 small
- 1 Tbsp. extra virgin olive oil
Heat oil in a large skillet over medium heat. Saute the diced onion until it becomes soft and translucent.
Add ground turkey to the pan and brown, using a wooden spoon to break it into smaller pieces. Stir in the taco sauce.
Allow the meat mixture to cook down over medium heat until it thickens, stirring occasionally - about 10 minutes.
Assemble the bowl: divide cooked rice between 4 serving bowls. Top with taco meat, lettuce, tomatoes, cheese and avocado.
