Taco in a Bowl

Ingredients
  

  • 1 lb. ground turkey
  • 4 cups cooked white rice
  • 2 cups cherry tomatoes quartered
  • 2 cups iceberg lettuce shredded
  • 1 avocado diced
  • 1 cup taco sauce
  • 1 cup cheddar cheese shredded
  • 1 cup diced onion 1 small
  • 1 Tbsp. extra virgin olive oil

Instructions
 

  • Heat oil in a large skillet over medium heat. Saute the diced onion until it becomes soft and translucent.
  • Add ground turkey to the pan and brown, using a wooden spoon to break it into smaller pieces. Stir in the taco sauce.
  • Allow the meat mixture to cook down over medium heat until it thickens, stirring occasionally - about 10 minutes.
  • Assemble the bowl: divide cooked rice between 4 serving bowls. Top with taco meat, lettuce, tomatoes, cheese and avocado.
