Tabouli Recipe (Gluten-Free Tabbouleh with Quinoa)

Ingredients
  

  • 2 cups chopped flat-leaf Italian parsley
  • juice of 2 lemons
  • 1/3 cup chopped scallions
  • 1/2 cup cooked quinoa
  • 5 small tomatoes Roma or vine, seeded and diced
  • 1 Tbsp. extra virgin olive oil

Instructions
 

  • Chop the parsley by hand or in a food processor. Dice the tomatoes and remove the seeds. Chop the scallions. Cook quinoa according to package directions. 
  • Place all ingredients in a large bowl and gently fold to combine. Season with salt and pepper.
