Easy BBQ Chicken Casserole Recipe (with Rice)

Ingredients
  

  • 3 cups cooked chicken cubed
  • 3 cups cooked white rice
  • 3 cups grated cheddar cheese + more for the top
  • 1 10 oz. can diced tomatoes with green chiles
  • 1 cup prepared BBQ sauce
  • 1 15 oz. can corn kernels
  • 1 cup cooked bacon, diced about 8 strips
  • 1 cup chopped scallions + more for the top
  • 1/2 cup sour cream

Instructions
 

  • Preheat oven to 375 degrees.
  • Combine all ingredients in a large mixing bowl. Transfer the chicken mixture to a 9x13 baking dish.
  • Sprinkle the top of the casserole with additional grated cheddar cheese. Bake for 25 minutes.
  • Garnish with extra chopped green onions before serving, if desired.
