Easy BBQ Chicken Casserole Recipe (with Rice)
Use your leftover BBQ chicken to make this quick dinner with cheese, corn and bacon

- 3 cups cooked chicken cubed
- 3 cups cooked white rice
- 3 cups grated cheddar cheese + more for the top
- 1 10 oz. can diced tomatoes with green chiles
- 1 cup prepared BBQ sauce
- 1 15 oz. can corn kernels
- 1 cup cooked bacon, diced about 8 strips
- 1 cup chopped scallions + more for the top
- 1/2 cup sour cream
Preheat oven to 375 degrees.
Combine all ingredients in a large mixing bowl. Transfer the chicken mixture to a 9x13 baking dish.
Sprinkle the top of the casserole with additional grated cheddar cheese. Bake for 25 minutes.
Garnish with extra chopped green onions before serving, if desired.
