Combine all ingredients in a large mixing bowl and stir well using a wooden spoon. Dump the mixture out onto a work surface and knead until you have a smooth dough. Form the dough into a ball.
Cover the dough ball with a dish towel. Let it rest for 10 minutes.
Uncover the dough. Divide dough into 12 equal parts. (For extra large tortillas, divide the dough into 8 equal parts.) Keep the dough covered with a clean kitchen towel while you work.
Coat a 10" non-stick pan with cooking spray or a thin layer of extra virgin olive oil. Set the pan over low heat.
Using a rolling pin, roll out a piece of dough as flat as possible. Place the tortilla into the pan and cook for 30-60 seconds. Flip gently and cook for another 30 seconds. Remove from the pan onto a separate plate.
Repeat the process with the remaining pieces of dough. Stack the tortillas on top of each other to rest. Serve warm or at room temperature.
