Optional step: brine the chicken. Place wings in a large bowl and cover with chicken broth. Cover the bowl with plastic wrap and refrigerate for 1 hour and up to overnight.
Preheat oven to 425 degrees. Combine all dry ingredients in small bowl.
Pat wings dry with paper towels and place them in a large mixing bowl. Coat them in canola oil. Pour in the dry rub mixture and toss to coat the chicken.
Arrange wings on an ungreased baking sheet. Bake 45 minutes. Allow to cool for 5 minutes before removing from baking pan. Serve warm.
