Air Fryer Chicken Schnitzel

Tender chicken, pounded thin, coated in seasoned bread crumbs and air fried to perfection!

Ingredients
  

  • 1 lb. boneless skinless chicken breasts
  • 1 quart chicken broth
  • 2 cups panko bread crumbs
  • 1 cup all purpose flour
  • 2 large eggs beaten
  • 2 Tbsp. sesame seeds
  • 2 tsp. garlic powder
  • 1 1/2 tsp. paprika
  • 1 1/2 tsp. salt

Instructions
 

  • Place chicken breasts into a large bowl. Cover with chicken broth. Cover the bowl with plastic wrap or a lid. Place in the refrigerator for at least 1 hour, up to overnight.
  • Combine the panko, sesame seeds, garlic powder, paprika and salt in a shallow bowl.
  • Place flour in a second shallow bowl and the beaten eggs in a third bowl.
  • Remove the chicken from the brine. Place chicken on a work surface between two pieces of plastic wrap. Using a kitchen mallet, pound chicken very thin.
  • Preheat air fryer to 400F degrees.
  • Dredge the chicken in the flour, egg and bread crumb mixture, in that order.
  • Place the chicken in the air fryer basket and coat with nonstick cooking spray. Air fry for 6-7 minutes. Flip and coat with more nonstick cooking spray. Air fryer another 6-7 minutes.
  • Do this in batches so you don't overcrowd the air fryer.
