Ingredients
  

  • 1 package plant-based ground "beef"
  • 1 can vegetarian refried beans
  • 1 1/2 cups shredded romaine lettuce
  • 1 avocado peeled, pitted and diced
  • 1 cup grape tomatoes halved
  • 1/2 cup diced scallions
  • 1/4 cup cilantro chopped
  • 2 Tbsp. vegetable oil
  • 3/4 tsp. chili powder
  • 1/2 tsp. cumin
  • 1/4 tsp. paprika
  • 1/4 tsp. salt
  • 1/8 tsp. garlic powder
  • 1/8 tsp. onion powder

Instructions
 

  • Defrost the ground "beef" according to package directions.
  • Heat the vegetable oil over medium-high heat in a medium-sized skillet. Cook the ground "beef" 3-4 minutes. Add the chili powder, cumin, paprika, salt, garlic powder and onion powder. Continue to cook until browned. Remove from heat and set aside.
  • Spread the refried beans evenly onto a large serving plate. Top with shredded lettuce, followed by ground "beef", tomatoes, avocados, scallions and cilantro.
  • Serve with tortilla chips.
