Crepes in Broth (Scrippelle 'Mbusse)

A rustic Italian soup of crepes & hot chicken broth

Whisk eggs, water and flour to make the crepe batter

Measure 2 Tbsp. of batter to make each crepe

When the edges curl up, it's time to flip!

Finished crepes are light and pale in color

Sprinkle Parmesan cheese and roll, cigar-style

Ladle hot broth over the crepes. Enjoy!
