Baking with Zucchini
Chocolate Chunk Zucchini Muffins
Wholesome, chocolatey muffins made with grated zucchini that are easy to bake and fun to eat
- 1 2/3 cups flour
- 3/4 tsp. salt
- 1 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/2 cup sugar
- 2 eggs beaten
- 1/2 cup vegetable oil
- 3 Tbsp. water
- 1 cup grated zucchini
- 1/2 tsp. lemon juice
- 3/4 cup semi-sweet chocolate chunks
- Preheat oven to 350 degrees. Grease and flour a 12-cup muffin tin.
- In a large bowl, combine the flour, salt, baking soda and cinnamon. In a separate bowl, whisk together the eggs, water, sugar, oil and lemon juice. Stir the wet ingredients into the dry ingredients until combined. Fold in the grated zucchini and chocolate chunks.
- Fill each muffin tin 2/3 of the way. Bake 40 minutes.
