Saint Lucifer Burrito Bowls

I am a big fan of Mexican food. I love the balance that most Mexican dishes have of protein, carbs and veggies. Most Mexican dishes are high in fiber and low in sugar. It’s a very diet-friendly and gluten-free friendly cuisine. So when the guys at Saint Lucifer Spice sent me some of their seasoning blends to try, my mind went immediately to creating something Mexican. These Saint Lucifer Burrito Bowls are everything great about Mexican cuisine – fresh ingredients, gluten-free, high in fiber and huge on flavor.

Saint Lucifer Burrito Bowls

These Saint Lucifer Burrito Bowls are piled high with goodness. They have the right amount of kick without being overpowering, and the spice is cooled down with a generous drizzle of Jalapeno-Lime Crema which is not to be missed. I swapped out traditional cheddar or jack cheese for Cojita, which is one of my favorites. If you’ve never had Cojita cheese, you’ll want to use it in all of your Mexican dishes. It’s mild and crumbly, and when sprinkled on top of dishes like these Saint Lucifer Burrito Bowls, adds an addictive saltiness that’s really delicious.

The beauty of a burrito bowl is that you can make it whatever you want it to be, as long as you stick to the basic components of rice, meat and beans. These Saint Lucifer Burrito Bowls are made with ground turkey, but you could use ground beef, pork, or even a flaky white fish. For the Spanish rice, if you want to really cut carbs you could use seasoned cauliflower rice instead. I love fajita-style veggies for this bowl, but you could use any kind of veggies that you enjoy. Not a fan of black beans? Try refried beans. The Prince loves when I use refried beans in these bowls. So it’s really your call!

What I can tell you for sure is that you’ll love the Saint Lucifer spices that are used in this dish. Instead of five or six ingredients you’d need to blend together, just use one Saint Lucifer spice. Makes prepping this dish a whole lot easier. And there are so many ways to use these spice blends, they’ll never go to waste. If you don’t have access to Saint Lucifer spices, I give you some alternatives down below. Enjoy!

For the Bowls

  • 4 cups cooked white or brown rice
  • 1 lb. ground turkey
  • 1 Tbsp. olive oil
  • 1 can black beans, drained and rinsed
  • 1 onion, sliced
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 avocado, sliced
  • 1/2 Tbsp. Saint Lucifer Habanero Table Spice (or 1/2 tsp. garlic powder + 1/2 tsp. salt + 1/4 tsp. paprika + 1/4 tsp. cayenne pepper)
  • 4 tsp. Spanish rice seasoning (see below)
  • 1 cup Cojita cheese, grated
  • limes (for garnish, optional)
  • cilantro (for garnish, optional)

Spanish Rice Seasoning

  • 2 Tbsp. chili powder
  • 1 Tbsp. cumin
  • 1/2 Tbsp. sweet paprika
  • 1/2 Tbsp. salt
  • 1 tsp. garlic powder
  • 1 tsp. onion powder

Jalapeno-Lime Crema

  • 1 cup low-fat sour cream
  • 2 tsp. lime juice
  • 1 tsp. Saint Lucifer Jalapeno Table Spice (or 1/4 tsp. onion powder + 1/4 tsp. chili powder + 1/2 tsp. garlic powder)
  • 1/2 tsp. salt

In a large skillet over medium heat, brown the ground turkey. Do not drain liquid. Off heat, stir in the Habanero Table Spice. Set aside.

Heat olive oil in a nonstick skillet over medium heat. Saute the onion and peppers until soft and slightly charred.

Stir Spanish Rice Seasoning into the cooked rice and distribute between 4 serving bowls. Divide the ground turkey between the bowls. Arrange the onions, peppers, black beans and avocado in each bowl. Drizzle the Jalapeno-Lime Crema over top and sprinkle with grated Cojita cheese. Garnish with cilantro and fresh lime slices.
