These bite-sized mini appetizers are pretty, elegant and only take one hand to hold. So you can have your cocktail in the other!
And you won’t believe how easy they are to make using a tube of buttery crescent roll dough! They’re the perfect appetizer for when you want to impress guests.
What’s in these Easy Cranberry Brie Tartlets
A short list of simple ingredients is all you’ll need to make this delicious appetizer:
- whole cranberry sauce (store bought or homemade)
- brie cheese
- crescent roll dough
- pecans
- fresh rosemary
If you’re in a pinch, absolutely use canned cranberry sauce. If you’ve got the time, whip up a quick batch of my easy homemade cranberry sauce – it tastes amazing in these little bites.
How to Make Baked Brie and Cranberry Tartlets
You’ll need a mini muffin tin to create this cranberry brie appetizer.
First, roll out the crescent roll dough and cut it into 24 squares. I like to use a pizza cutter for this part.
Then, place one square of dough in each little muffin compartment.
Now, cut your wheel of brie into small pieces and place one piece into each crescent square.
Top the brie with a very small spoonful of cranberry sauce, followed by a few crushed pecans. Now they’re ready to bake!
How to Serve Mini Cranberry Brie Tarts
Allow these cranberry brie mini tarts to cool for a few minutes before removing them from the mini muffin pan. They’ll release easier when they’re at room temperature.
Give them a sprinkle of chopped rosemary just before you serve them.
This bite-size appetizer is best enjoyed slightly warm or at room temperature.
What do Cranberry Brie Tartlets taste like?
Simply put, these cranberry brie bites taste like the holidays. The creamy brie cheese, tangy cranberry, aromatic rosemary and buttery pecans encased in a beautiful little golden brown pastry – almost too perfect to eat.
They are just as at home at Thanksgiving as they are at Christmas, so there are lots of opportunities to enjoy them throughout the holiday season.
And can I just tell you – they disappear faster than anything else I serve at our holiday parties. They’re my favorite things to serve at parties!
Do you take the rind off of brie before baking?
You do not need to take the rind off of brie before baking it. The rind is totally edible.
There are some times when I will remove the rind from the top of the brie, like when I’m baking an entire wheel.
But for this easy appetizer, I like to leave the rind on for this recipe because it helps the cheese hold its shape inside the little crescent roll cups.
Variations on this Baked Brie & Cranberry Tartlets Recipe
1. The Fruit. Brie cheese is super versatile, so if cranberry isn’t your thing, try using fig jam, apricot preserves or even some sweet brown sugar instead.
2. The Nuts. Crushed walnuts or almonds are tasty alternatives to pecans. For a sweeter bite, try candied pecans.
3. The Herbs. Fresh sage and thyme add a delicious earthiness with a slightly different flavor profile than rosemary.
Crescent Rolls vs. Puff Pastry
Both crescent rolls and puff pastry are very delicious ways to enjoy brie cheese. And if I was simply wrapping a wheel of brie in pastry, like for a brie en croute, I would use puff pastry sheets.
But for these cranberry brie tartlets, the crescent roll dough will be just a bit sturdier, so these bite-sized appetizers will hold their shape better.
Can Cranberry Brie Tartlets be made ahead of time?
Yes yes yes! That’s the best part about this easy recipe!
Assemble the whole thing ahead of time so that all you have to do is pop these little guys into the oven for 15 minutes before serving.
They can stay like this in the fridge until you’re ready to bake them.
How to Store Cranberry Brie Bites
If you have any leftovers, store them in an airtight container in the refrigerator. Reheat them in a 350 degree oven for 3-4 minutes.

Baked Brie and Cranberry Tartlets with Crescent Rolls
Ingredients
- 1 cup whole cranberry sauce
- 8 oz. wheel of brie cheese
- 1 tube crescent dough
- 1/3 cup pecans chopped
- 3 sprigs rosemary roughly chopped
Instructions
- Preheat oven to 375 degrees. Coat a mini muffin pan with nonstick cooking spray.
- Roll out the crescent dough and pinch the seams together with your fingers so that it forms one large rectangle. Using a sharp knife or pizza wheel, cut the dough into 24 squares.
- Cut brie into 24 small cubes.
- Press dough squares into each compartment of the muffin tin. Place one cube of brie into each piece of dough. Top brie with 1 tsp. of cranberry sauce and some pecans. Bake 13-15 minutes or until dough is puffed and golden.
- Allow to cool 10 minutes, then remove tartlets from muffin tin and sprinkle with chopped rosemary.

Hi Alex, each mini tart is approximately 83 calories. The sprinkle of pecans will add a couple more calories, but they’re negligible. Hope this helps 🙂
